I have read several articles in the likes of Design News and other engineering magazines over the years speaking of the design and stress analysis and modeling of new state of the art rides.

Sounds like there are literally only a handful of key players and a Google search ought to find them.

Be prepared to do design and analysis in the 3D Solids environment.

Not exactly what you're asking for, but a very interesting and inspirational read is Roller Coasters, Flumes, and Flying Saucers (1999) by Robert Reynolds. Based on interviews with Ed Morgan and Karl Bacon, this is the insider's history of Arrow Corp, who designed and built the mechanics for many of Disneyland's rides. (Note: I am told that they author omits the contributions of many key players from the Disney side - but if it lapses from a historicist's view, it's still a fantastic story)
